View More03/05/2007 In the pro kitchens, we usually do something called "swimming," which is basically to hold the item being fried near the top, and then partially submerge the item in the fat (carefully, obviously) and moving it back and forth ("swimming") in the fat, for about 10 seconds. I usually do what I see them doing in the fish and chip shop and hold the end of the fish (if it is battered) and kind of wallow it around a bit in the oil so it won't stick to the basket.
